Kale
Red pepper flakes
Garlic
Olive oil

Your favorite toasted bread

This is a surprisingly flavorful starter that is extremely healthy too.
Wash the kale, discarding the central hard stem. Steam for a few minutes until tender. Chop the greens and sauté in olive oil with lots of finely chopped garlic and red pepper flakes. If the kale gets too dry, just add a little water. Adjust with salt and add freshly ground pepper to taste.
Although this is a very simple starter, there are a few tricks to keep in mind. Be sure the garlic is the very best quality that you can find. Before using it, cut it into halves and smell it. If the smell is not sharp, clean and “garlic-y,” thru it away and use a better one. Sautee the kale as long as you can (at least fifteen minutes, thirty is better) over very low heat and use a lid to keep the kale from getting too dry.
Arrange the cooked kale on toasted bread slices dabbed with garlic, and sprinkle with extra virgin olive oil.
